Smoked Salmon Risotto Salad

I made Smoked Salmon and Pea Risotto, but I replaced the peas with sweetcorn and added some Cumin to give a little extra taste and a rather nice colour.

I also used 180g of rice to finish off a pack.

The left over Risotto with a couple of hard boiled eggs served the next day’s lunch with a salad of iceberg lettuce, cucumber, cherry (grape) tomatoes, salad onions (scallions) and the last few olives from a jar.

That’s the sort of cheating I like!
